Black Bean Salsa

This is one of the best tasting Salsa's I have had!

Thought I would share it with everyone!!


Black Bean Salsa

1 can black beans- rinse in colander first
1 can regular rotel
1 can shoepeg corn
chop a bunch of cilantro (I like lots and lots!!)
1/4 cup Paul Newman's Olive Oil and Vinegar salad dressing

Mix together in a bowl and start eating with chips! Scoops are the best because you can hold lots of the salsa in them!

Spouptacular

I am participating in BooMama's Souptacular Crockpotalooza. This recipe is a staple in our house during the cold Fall and Winter months. I am sure there are lots of these floating around but thought I would share ours.

Taco Soup

Mix the following ingredients in a large crock pot or a big soup pot.
2 lbs browned ground chuck
2 pkg taco seasoning
2 pkg Hidden Valley Ranch dressing (dry pkgs)
1 can shoepeg corn (white corn)
1 can black beans
1 can kidney beans
2 cups water
1- 2 cans rotel (mild, hot whatever your preference)
1 can diced tomatoes

The longer it cooks the better it tastes. Top with sour cream and grated cheese.

Crunchies for the top

Get a package of burrito or soft taco wrappers. Take kitchen scissors and cut them into long strips. Then place on a baking sheet and bake in a 350 degree oven for about 10 minutes or until lightly brown. These are great on top of the soup with the cheese and sour cream.

What's for Dinner?

I had the best dinner last night!! My Aunt Polly in New Hampshire made it for me when we visited last month. I had her email the recipe and made it last night.

Summer Pasta with Tomatoes, Basil and Brie

Here are the main ingredients.



(tomatoes, Olive oil, Basil and Brie)

This is all of the ingredients after I chopped. It needs to marinate for awhile.


Here is the finished pasta.


My little Abigale wanted a second helping and kept telling me over and over how yummy it was!

Recipe- Taco Soup

Here is my recipe for Taco Soup. My kids love it and I usually have enough for leftovers which my kids love to heat up after school for a snack. Can you believe that???

Taco Soup
